Baby Banana Waffles

One perfectly ripe banana is the soul of these waffles — sweet enough that no sugar is needed. The batter rises overnight, so it bakes up wonderfully soft and pillowy. Once cooled, slice it into finger strips that are just right for a baby starting on self-feeding to grip and slowly gnaw. Add a little peanut butter or fresh fruit to the grown-up portion and you have a weekend breakfast the whole family can share.

Ingredients

  • Ripe banana1
  • Egg1
  • Milk (formula or breastmilk under 1)80–100g
  • Baby-friendly oil10g
  • Cake flour or all-purpose flour (sifted)150–160g
  • Yeast (instant or active dry)2g

Method

  1. Combine wet ingredientsIn a blender or with a hand mixer, combine the banana, egg, milk and oil. Blend until completely smooth and frothy.
  2. Add dry ingredientsPour the wet mixture into a bowl. Add the sifted flour and yeast and mix gently until there are no lumps.
  3. First riseCover the bowl and let the batter rest at room temperature for about 30 minutes to rise.
  4. Deflate & refrigerateStir with chopsticks or a spatula to release the air, then cover and refrigerate overnight.
  5. Prepare the next morningTake the batter out of the refrigerator and stir again to release the air.
  6. Cook the wafflesPreheat your waffle maker and cook each waffle for about 4–6 minutes, until baked through, the centre has no wet batter and the egg is fully set. Let cool to just warm before serving to baby.

Safety notes

  • Always bake fully through — the centre should have no wet batter and the egg should be fully set; never serve undercooked.
  • Allergens: egg, milk and wheat (gluten). If any of these is new to baby, introduce one new food at a time and watch for 2–3 days for any reaction.
  • No added salt, sugar or honey under 1 — the banana provides all the sweetness you need.
  • Milk: for babies under 1, use formula or breastmilk; whole milk only for babies over 1.
  • Cut into finger strips and serve warm; keep baby seated and supervised for the whole feed.

Banana and flour provide carbohydrates, baby's main source of energy for an active day; egg and milk add protein and calcium to support growth. Tips

Make a batch: once cooled, freeze the waffles separated piece by piece. Reheat in a toaster or dry pan to crisp them up — a real time-saver on busy mornings.

Share with adults: the grown-up portion takes well to a little maple syrup, peanut butter or Greek yoghurt and fresh fruit — one batch, two ways to enjoy.

Adjust the texture: add a touch more milk for a softer waffle, or cook 30 seconds to 1 minute longer for extra crispness.
