Once baby is past 9 months, they start wanting to grab and feed themselves. These banana cupcakes lean on the natural sweetness of ripe banana alone — no added sugar or salt at all — while whipped egg whites give them a soft, airy texture that little hands can grab in one piece. Banana brings carbohydrates and potassium, eggs add protein, and they're perfect for afternoon tea or on the go. Want some for yourself? Ingredients

  • Eggs (whites and yolks separated)2

  • Cake flour120g

Method

  1. PreparePreheat the oven to 180°C (350°F) and line a cupcake tin with paper liners. Place the separated egg whites back in the refrigerator for about 20 minutes — chilled whites whip up more easily.
  2. Make the yolk batterIn a bowl, mash the bananas. Add the egg yolks, yeast and cinnamon (if using) and mix well, then add the flour and mix until there are no dry lumps.
  3. Whip the egg whitesIn a separate clean bowl, add the egg whites and a few drops of lemon juice. Beat with a mixer until they are white and form stiff peaks.
  4. Combine the battersGently fold one third of the whipped egg whites into the yolk batter until just combined, then fold in the remaining whites in stages until fully combined, keeping it light and airy.
  5. Rest & fillLet the batter rest for about 30 minutes, then gently stir to release the air (deflate) and pour into the liners until about four-fifths full.
  6. BakePlace in the preheated oven and bake for about 20–25 minutes, until the cupcakes are baked through with no wet batter in the centre and the egg fully set; a skewer inserted into the centre comes out clean. Let them cool to just warm before serving baby.
