A Buyer's Guide How to Choose Dried Fish Maw
The prices swing enormously and every label reads like a code. But three things really decide a good piece: the type, the head-count, and male vs female. Here's how to read them — and how to dodge the bleached and plastic fakes.
Fish maw (花膠 — dried fish swim bladder, 魚鰾) is the "肚" in the famous quartet of banquet ingredients, 鮑參翅肚. It's a festive and gifting staple in Hong Kong, and one of the most intimidating things on the dried-seafood street to actually buy. One counter reads "廣肚", the next "花膠筒", another "白花膠"; prices run from a few hundred dollars a catty to tens of thousands for a single prized piece. That's a lot of money riding on a label you can't quite decode.
The good news: once someone lays out the system plainly, it stops being mysterious. Three axes decide most of it — the type, the head-count, and whether a piece is male or female (公乸). Get those three right, plus a quick eye for the fakes, and you'll choose with confidence instead of guessing.

1. The type ladder: it's really about the fish
Fish maw is graded first by which fish it came from — and that drives the thickness, the gelatinous body, and the price.
Hong Kong's Consumer Council names the common set, and trade merchants line them up into a price ladder. From the collector's peak down to everyday value, here's how the tiers stack — and, honestly, where our own fish maw sits. [Consumer Council; HK01; kwanshingstore; premierfood]
Collector's peak to everyday value — by prestige and price, not by "better for everyone".
The swim bladder of large deep-sea croaker (鰵魚), mostly wild Indian Ocean. Thick, firm, dense gelatinous body that holds its shape and doesn't dissolve. Called "花膠之冠" — the crown of fish maw. Aged (陳年) pieces are treasured collector-grade.
Prized rarities — 蜘蛛肚 (spider maw, from wild 大紅魚) can run to five figures a piece; 白花膠 shows a tight, distinct herringbone grain. Scarce, gifting-grade, high price.
South-American yellow-croaker maw with a long straight grain and two air-tubes; strong swell, springy and meaty, holds up in soup. Male and female differ clearly, so it is sold split by 公乸.
Perch (鱸魚) swim bladder, including African Nile perch from Lake Victoria — Hong Kong's mainstream fish maw. Tube-shaped (花膠筒) or flat (鴨包肚), soft-smooth, versatile, mid price. The 金龍肚 grade is prized for strong swell, a thick meaty body and — key — not dissolving even in long braises or slow soup. Its male/female barely differ, so it is not sold split.
Cod (鱈魚) swim bladder from Northern Europe, New Zealand or Iceland. Clean and low in fishiness, the friendly starter tier for everyday cooking.
Common types per the Consumer Council and HK dried-seafood merchants. Origins and tiers are general guidance, not fixed grades.
Where we sit — plainly. Our African 金龍肚 tube maw is perch (鱸魚), not croaker. We won't dress it up as 鰵魚, 金錢鰵 or 廣肚 prestige. What it genuinely does well is what most home banquets actually want: a consistent thickness, a strong swell, a rich gelatinous mouthfeel, and a body that stays intact through hours of cooking. Value and reliability — not rarity.
2. Head-count (頭數): the number that grades the piece
Same counter-intuitive logic as sea cucumber — and it looks backwards, which is where shops lose people.
"頭" (head) is simply how many pieces it takes to make up one catty (斤, about 600g). So "30頭" means roughly 30 pieces per catty, and "110頭" means about 110 pieces per catty.
Here's the twist: the fewer the head, the larger and heavier each individual piece — and the higher the grade and price. A handful of big pieces fills a catty; it takes many small ones to fill the same catty. Fewer head, bigger maw. The Consumer Council puts it plainly: head-count is pieces per catty, and the fewer the head, the larger the body. As one illustration of how sharply price moves, HK01 cites a 廣肚公 running roughly $580 per tael at 13頭 versus about $1,780 per tael at 4頭 — same type, triple the price on head-count alone. The pro tell: at the same head-count, pick the thicker piece. Two pieces at the same 頭數 are not equal — the Consumer Council and HK01 both say to choose the thicker one (愈厚愈好). A big-but-thin piece that only looks translucent because it's thin is inferior to a smaller, thick, meaty one. Size gets you in the door; thickness wins the piece.
3. Male vs female (公乸): the signature fish-maw split
This one is unique to fish maw — and it maps straight onto how you'll cook it.
On many premium types, fish maw is sold as male (公) or female (乸), and the difference is all about texture in the pot. [HK01; Consumer Council; kwanshingstore]
Texture: firm, springy, holds its gelatin and keeps its shape — doesn't dissolve in long cooking.
The tell: usually two grooves down the body (兩條氣孔); croaker males are saddle-shaped.
Best for: braising, stir-frying, 扣 — dishes where you want the bite. Costs roughly double the female.
Texture: softer and stickier; it dissolves ("瀉身") and melts its gelatin into the liquid.
The tell: no air-grooves; a flatter, rounder grain.
Best for: soups and sweet soups (糖水) — where you want the gelatin to melt into the broth. Roughly half the price of male.
One honest caveat. Not every fish maw can be sexed by eye. On perch tube maw (花膠筒) — including our African 金龍肚 — male and female look and behave almost the same, so it isn't sold split by 公乸. Treat this section as buyer education for the types where it matters, not as a claim about the tube maw. Handily, the 金龍肚 already leans to the firm, non-dissolving side that most people want for braising and slow soup.
4. How to judge a good piece — and spot the fakes
This is the section worth slowing down for. A polished label can still hide a poor — or fake — piece.
What good looks like, off the shelf:
- Translucent to light (對光半透明) with a crisp, clear grain — this is your best single test.
- A natural golden / amber colour with an even tone and a soft sheen — not bleached-white, not a murky deep-yellow.
- Thick, whole and properly dry (乾身) — no cracks, pinholes or bug damage (蟲蛀), and no dampness.
- Minimal blood streaks (少血筋). A few natural streaks are fine and normal; heavy bruising just means rougher processing — acceptable for home use, less ideal for gifting.
- A clean smell — no strong fishy, ammonia (氨) or, above all, plastic/chemical odour.
The traps to avoid: bleached, and the "plastic seafood" fakes.
Bleached (漂白): suspiciously pale pieces, or ones that turn a murky deep-yellow when you hold them to light, with wrinkled, cracked skin and a blurry, indistinct grain. Real fish maw's colour is a natural gold, and its grain stays crisp and clear.
The "plastic seafood" (塑膠海味) fake: Hong Kong exposés have warned of ultra-cheap fish maw sold at trade fairs (展銷會) that is chemically synthesised — after soaking it turns rubbery, like a rubber glove, and smells of plastic. The rule of thumb: if the price looks too good to be true at a fair, be suspicious, and run the three field tests — hold to light, smell it, read the grain. [家承本味; consumer exposé]
5. Soaking (發花膠) & storage, the high-level version
Fish maw is more forgiving than sea cucumber, but there's a rhythm. Here it is, kept simple:
- Steam over water (隔水蒸) for about 15–30 minutes — longer for bigger, thicker pieces. This also helps drive off any smell.
- Cold-soak in the fridge for 1–2 days in plenty of clean water, changing the water two or three times, until soft all the way through.
- Blanch with ginger and spring onion (薑蔥) to chase off any lingering fishiness before cooking.
- Portion and freeze (急凍) whatever you won't use now; drain before cooking.
The non-negotiable rule: no oil, anywhere. Keep oil off your tools, your hands and the water — the same discipline as sea cucumber. Oil interferes with the swell. [premierfood]
Gelatinous soup, or a firm bite? A merchant tip worth knowing: for a richer, more gelatinous soup, add the fish maw from the start and simmer it with everything else; to keep its springy bite, drop it in only about 15 minutes before the soup is done.
On the swell: good tube maw (金龍肚) rehydrates large — sources call its swell excellent — but there's no single reliable multiple to quote, so we won't fix a number. Judge it in the soaking, not on a label. [kwanshingstore; premierfood]
Dried: keep it airtight in a cool, dark, dry place, sealed from air so it doesn't re-absorb moisture (回潮). A piece of star anise (八角) tucked alongside helps deter insects. Well-kept, aged (陳年) fish maw is genuinely prized — the trade airs it out periodically to keep it dry.
