Golden peach is the yellow-fleshed one, and it is a different eating experience from a white peach rather than a fancier version of it. The flesh is firmer, so it cuts into clean wedges instead of collapsing, and the aroma is heavier and more perfumed. If you have ever found white peaches too soft or too delicate, this is the peach that answers that.

These are from Nagano, which is peach country in Japan and the region most Hong Kong buyers already know from its apples and grapes.

Because the flesh is firm to begin with, people misjudge the ripening more often on this one than on a white peach. It will never go soft and squashy — do not wait for that. Leave it at room temperature, away from direct sun, and judge it by smell and by a very slight give at the shoulders near the stem. Once it is there, chill it briefly and eat it that day. The firmness is the variety, not an unripe peach.
