This is the Cantonese classic 蔥油手撕雞 (scallion-oil hand-shredded chicken) — reimagined with tender quail breast and made completely baby-safe. The quail is gently steamed until fully cooked, hand-shredded into soft strands, then tossed in a fragrant, salt-free scallion oil.

How to Make

Steam the Quail

Steam the quail breast for 15–18 minutes until fully cooked through — no pink, with juices running clear. Steaming is the gentlest way to keep the lean breast tender while making sure it is completely cooked and safe for baby. Rest 2 minutes.

Hand-Shred

Using two forks or clean fingers, shred the rested quail along the grain into fine, soft, short strands — small and safe for baby to pick up and chew.

Make the Scallion Oil

Gently warm the oil with the ginger over low heat, then take it off the heat and stir in the chopped spring onion until fragrant. Keep it salt-free and soy-free for the baby's portion.

Toss & Serve

Toss the shredded quail through the warm scallion oil. Serve as soft strands on their own or over soft rice or congee. Cool to a safe temperature and serve. For the adults: add a few drops of low-sodium soy sauce for a classic 蔥油手撕 plate.
