Iberico pork pluma from Spain's acorn-finished black pigs — a prized, richly marbled cut from the front of the loin. Generous intramuscular fat keeps it exceptionally juicy and tender, with the deep, nutty flavour Iberico is known for. Ideal pan-seared or grilled as a Western-style steak, or glazed as Cantonese char siu.

Thaw in the fridge before cooking; sear over high heat and rest a few minutes before slicing.
