Beef congee is a classic in Hong Kong baby weaning — and with good reason. The slow-cooked rice breaks down into a soothing, easy-to-digest base that lets the beef's rich iron and protein shine. Using brown rice adds a gentle fibre boost and additional minerals without compromising texture when cooked long enough.

Ingredients
Makes approx. 2 baby servings. Brown rice takes longer to cook — mix with white rice to reduce cook time if needed.
How to Make
Rinse brown rice and add to a small pot with 350ml water. Bring to a boil, then reduce to the lowest heat. Simmer for 30–35 minutes, stirring occasionally, until the rice is fully softened and the porridge is silky.
Add the beef tenderloin slices directly to the simmering congee. Cook for 8–10 minutes, using a spoon to break the slices apart, until fully cooked through with no pink remaining.
For a smoother texture, blend briefly with a hand blender. For babies ready for more texture at 10m+, mash well with a fork to a soft porridge with small chunks — this encourages texture exploration.
Cool to a safe temperature. Serve 3–4 tablespoons. Refrigerate for up to 24 hours, or freeze in portions for up to 1 month.
