Vietnam tiger prawns are celebrated for their naturally sweet, meaty flavour — a result of the warm, clean coastal waters they're raised in. When gently cooked into congee, they release their natural sweetness into the broth, creating a deeply flavourful base that's warming and comforting in equal measure.
Sweet potato is the ideal base — its natural sugars and beta-carotene complement the prawn's oceanic sweetness, while its starchy richness gives the congee a beautiful, golden colour. Added in the final moments, the prawns stay tender and flavourful throughout.
Ingredients
Makes approx. 1–2 baby servings. Do not freeze once prawns are cooked — refrigerate and consume within 24 hours.
How to Make
Rinse rice and add to saucepan with diced sweet potato and 320ml water. Bring to simmer, cover, and cook on low heat for 25 minutes until silky congee forms and sweet potato is completely tender.
Thaw prawns if frozen. Peel and slice each prawn into 3–4 pieces for quick, even cooking in the congee.
Stir sliced prawns into the hot congee. Cook on low heat for 2–3 minutes until prawns are fully pink and opaque throughout. The prawn sweetness infuses the entire congee instantly.
Cool to a safe temperature. Serve 3–4 tablespoons. Refrigerate for up to 24 hours. Do not refreeze once prawns are cooked.
