How to Make

Cook Congee Base

Rinse white rice and add to a small pot with 300ml water. Bring to a boil, then reduce to the lowest heat setting. Simmer for 20–25 minutes, stirring occasionally, until the rice breaks down into silky smooth congee.

Add Duck Liver

Add the duck liver cube directly to the simmering congee. Cook for 8–10 minutes, using a spoon to gently break and stir the liver as it cooks, until fully cooked through with no pink remaining.

Stir in Spinach

Add the chopped baby spinach to the pot. Stir and cook for a further 2 minutes until the spinach is completely wilted and tender. The congee will turn a beautiful, deep green.

Blend & Serve

For a smoother texture, briefly blend with a hand blender or mash well with a fork. Cool to a safe temperature. Serve 2–4 tablespoons. Refrigerate up to 24 hours or freeze for up to 1 month.
