Around 10 months, babies are ready to explore more texture. This congee is the natural next step after your baby has mastered barramundi purée — the same mild, low-mercury wild fish, now flaked into warm, creamy rice with the natural sweetness of corn.

Congee is a beloved Cantonese baby staple for good reason: it's gentle on digestion, endlessly adaptable, and a familiar comfort food for the whole family.

How to Make

Cook Congee

Rinse jasmine rice and place in a small saucepan with 400ml of water. Simmer over low heat for 20–25 minutes, stirring often, until the rice breaks down into thick, creamy porridge.

Steam Barramundi

Steam the barramundi fillet in a steamer for 8–10 minutes until fully cooked through and the flesh flakes easily.

Prepare

Run your fingers over the barramundi and remove all pin bones. Flake into small pieces. Stir corn kernels into the congee and simmer for 2 more minutes.

Combine & Serve

Stir flaked barramundi into the congee. Add a little water to adjust consistency. Cool to a safe temperature and serve warm. Freeze leftovers in a covered container for up to 1 month.

Tips for Parents

Texture Progress

This is a great step up from purée. The soft flakes of fish and corn give babies something to feel in their mouths — building important oral motor skills.

Corn Note

Whole corn kernels can pass through undigested at this age — that's normal. If you prefer, briefly blend the congee before adding the fish for a smoother texture.

Storage

Cool completely before freezing. Store in a covered container or freezer bag — the congee will thicken further once frozen. Add a splash of water when reheating.

No Salt

Do not add salt, soy sauce, or seasoning to any baby congee under 12 months. The natural sweetness of corn and the delicate barramundi flavour is more than enough.
