From around 8 months, babies start learning to pick up food themselves, and this seafood and veggie pancake is perfect for that practice. Sweet, springy Vietnam Jumbo Tiger Shrimp meets soft potato and cooked mixed veg, bound with a light batter and pan-fried into golden little pancakes — cut into finger-size strips, it's a perfect baby-led-weaning finger food. Protein, omega-3 and vitamins all at once, and the adults can cut a piece smaller and share too.

Ingredients

  • Egg1
  • Small potato (peeled, finely shredded or diced)1/2
  • Vietnam Jumbo Tiger ShrimpShop ↗ (finely diced)1–2 pcs
  • Soft vegetables (cooked carrot, zucchini, bell pepper, finely diced)30–40g
  • Flour (all-purpose or cake flour; cake flour is softer)50g
  • Water20ml
  • Cooking oilA little

Method

  1. Beat the eggIn a mixing bowl, lightly beat the egg.
  2. Add veg and shrimpAdd the diced vegetables, potato and finely diced tiger shrimp, and stir well to combine.
  3. Make the batterAdd the flour and water and gently mix everything together until just combined into a slightly thick batter. If it's too thick, add a little more water — be careful not to overmix.
  4. Pan-fryHeat a little oil in a non-stick pan over medium-low heat. Pour in some batter and spread it to a small pancake thickness. Pan-fry over medium-low for about 2–3 minutes per side, until cooked through, no pink, the shrimp is no longer translucent (opaque pinkish-white), and the egg is fully set, with a golden bottom.
  5. Cool and cutIf needed, flip again and cook a further 1–2 minutes per side to be sure it's cooked through. Cool to a safe temperature, then cut into baby-friendly, easy-to-grip pieces and serve.

Safety notes

  • The shrimp and egg must be fully cooked — cooked through, no pink, the shrimp opaque pinkish-white; the egg fully set. Never serve underdone.
  • Allergens: shrimp (shellfish), egg. If new, introduce one new food at a time and watch for 2–3 days for any reaction; it's best to try the shrimp and the egg on separate days first.
  • No added salt, sugar or honey under 1. The shrimp and vegetables are already naturally sweet and savoury, so no extra seasoning is needed.
  • Keep seasoning for the adults: once cooked, the adults can add salt or a sauce to their own portion — keep baby's plain.
  • Cut into finger-size pieces (about an adult finger thick), serve warm, with baby seated and supervised.

Cooked into a pancake with a bit of thickness and cut into strips, it's just right for an 8-month-old to practise self-feeding (BLW) and build hand-eye coordination.

Tips

Batch it: fry a few extra, cool, then portion and freeze; reheat in a pan or oven before serving and the texture stays soft.

Texture by age: cook the vegetables until soft and dice them small enough; for younger babies cut into thin strips, for older babies into small squares to practise chewing.

Share with adults: from the same pan, set aside baby's portion, then the adults can add a little salt, pepper or a dipping sauce — one fry, two meals.
