Pomelo from Madou in Taiwan, and specifically 老樹 (old-tree) fruit. An older tree gives smaller pomelo with denser, sweeter flesh and thinner pith than a young tree does — it is a real grading distinction in Taiwan, not a marketing word. It is also the fruit that traditionally goes on the table at Mid-Autumn in both Hong Kong and Taiwan.

A carton holds 14 fruit and weighs about 5kg, so each one is around 350g. These are the small dense ones rather than the big watery ones.

Keep them at room temperature and give them a few days before you cut one. That resting period is called 辭水: the fruit loses a little moisture, the skin softens slightly and turns a shade yellower, and the flesh tastes sweeter for it. A skin that looks slightly slack is the sign it is ready, not a sign it has gone off.
